It's great isn't it!? I'm not sure exactly what techniques Phoebe used here, but she has told me she enjoys substituting nouns, almost arbitrarily. Not dissimilar to the Oulipo N+7 method, in which you replace every noun in a poem by the next 7th noun in the dictionary.
